Mother's Day Recipe: Lemon Herb Roasted Whole Chicken

Roast Chicken with Lemon


  • 1-2 teaspoon grated lemon zest
  • 2-3 cloves garlic, finely chopped
  • 1 teaspoon thyme leaves, fresh or dried
  • 4-5 tablespoons unsalted butter, at room temperature
  • Salt
  • Ground black pepper
  • 1 whole chicken, 4 lbs


  1. Mix lemon zest, garlic, thyme, 2-3 tablespoons butter, salt and pepper in a bowl until well combined.
  2. Gently lift the skin and separate it from the breast and thigh of the chicken. Coat and gently push the butter mixture under the skin and spread as evenly as possible.
  3. Melt the remaining butter and brush all over the chicken. Lightly sprinkle some salt and pepper all over as well.
  4. Use kitchen twine and tie the drumsticks together and tuck the wings behind the breast. Secure the chicken on the rotisserie spit rod set; ensure the forks are securely tightened to hold the chicken in place.
  5. Place the chicken in the Chefwave Sosaku Indoor Smokeless Grill and ensure the rotisserie rod is locked into place. Switch to “Rotisserie” mode and set the temperature setting to 425 deg F and the timer to 60 minutes.
  6. Rest the chicken for 15 minutes before carving.
