General Tsos Chicken

Ingredients
- 1 pound chicken thighs, cut into 1 inch cubes
- ½ tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil
- ½ cup all-purpose flour
- 2 tablespoons soy sauce
- 2 tablespoons black vinegar
- 1 tablespoon cooking wine
- 1 tablespoon white granulated sugar
- ½ cup broth (vegetable, chicken or beef)
- 2 red chili peppers, sliced
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- 1 green onion, cut into 1 inch pieces
- 1 teaspoon sesame oil
- 2 teaspoons cornstarch
Instructions
- Season the chicken in a mixing bowl with salt, pepper and oil. Toss well and set aside to rest for 10 minutes.
- In a large freezer bag, add flour and the season chicken. Seal the bag and shake vigorously until the chicken is well coated.
- Spray a nice even layer of cooking oil at the bottom of the cooking pot of the Swap Pot, place the coated chicken in the pot and use lid.
- Select the “Air Crisp” program and manually increase the cook time to 20 minutes.
- Wait until the Swap Pot has finished cooking the chicken before moving on to the next step. Remove the chicken from the Swap Pot and let it rest.
- In a medium bowl, whisk together soy sauce, black vinegar, cooking wine, sugar, broth, chili peppers, garlic, ginger, green onion, sesame oil and cornstarch. In a saucepan, cook the mixture over medium heat for 4-5 minutes while stirring continuously until the sauce thickens. Remove from heat.
- Gently toss the air fried chicken into the sauce until evenly coated.
