Eight Treasures Rice Pudding Recipe

Ingredients

  • 1 ¾ cup glutinous rice (white or black)
  • 2 tablespoons cooking oil
  • 4 tablespoons sugar
  • 2 ½ cup red bean paste
  • 10 candied lotus seeds
  • 10 Chinese red dates, dried and pitted
  • ½ cup black raisins
  • ½ cup green raisins
  • 6 pcs maraschino cherries
  • 6 pcs dried apricots
  • ¼ cup gojiberries
  • ¼ cup pine nuts

Instructions

  1. Soak the glutinous rice in cold water for an hour before using. Pour rice into a bowl and place the bowl on the steaming rack in the cooking pot.
  2. Use the steam function on the Chefe and cook the rice for 40 minutes.
  3. Combine the hot rice with oil and sugar in a mixing bowl.
  4. Select a bowl to use as a mould for the rice pudding and evenly coat it with a cooking oil sprayer.
  5. Start building your layers for the rice pudding
      1. Maraschino cherries
      2. Rice
      3. Apricots
      4. Rice
  6. Place bowl on the steaming rack of the cooking pot, use the steam function on the Chefe and cook for 1 hour
  7. Serve hot or cold, enjoy!
