Creamy Oxtail Soup Recipe

Ingredients

  • 2 pounds beef oxtail
  • 1 box of beef broth (32 oz)
  • 1 can cream of mushroom (10.5 oz)
  • 1 can tomato soup (10.75 oz)
  • 4-5 cloves of garlic, chopped
  • 2 bay leaves
  • ½ medium onion, chopped
  • 1 cup carrots, peeled and cut into ½ inch cubes
  • 1 cup potatoes, peeled and cut into ½ inch cubes
  • ½ cup finely chopped fresh parley, for garnish
  • ½ cup bread crumbs, for garnish
  • Salt (season to taste)
  • Pepper (season to taste)
  • ¾ cup dry red wine (optional)

Directions

  1. Add the almond into the ChefWave Milkmade to make fresh almond milk. Select the Almond program and 20 oz. volume setting.
  2. Mix the freshly made hot almond milk, coconut milk, maple syrup/agave nectar, vanilla, cinnamon and nutmeg into a blender.
  3. Blend until well combined.
  4. Strain through a mesh strainer over a bowl to remove excess froth.
  5. Stir in bourbon.
  6. Garnish with more nutmeg.
